Seaweed Snacks 4for $ 5 .35 oz Reg. $1.69 Organic Salad Mixes 2for $ 6 5 oz Reg. $3.99 New Leaf's Own Love Beet Soup Serves 4 2 Tablespoons butter 1 leek, chopped and rinsed 1 lb red beets, peeled and large cube 3 Russet potatoes, large cube (peeled optional) 3 cups vegetable stock 2 teaspoons arrowroot 1-1/2 cups Half & Half 1 teaspoon sea salt 1/4 teaspoon white pepper Sour cream or yogurt to garnish, optional Heat the butter in a large pot over medium heat. When the foam subsides, add the leeks, beets, potatoes, salt and pepper. Sauté, stirring often, until the vegetables soften, 15-20 minutes. Pour in the vegetable stock and bring the soup to a boil. Reduce heat and simmer gently for 10-15 minutes, stirring occasionally. Remove from heat. using an immersion wand or a blender, carefully blend all ingredients until smooth. Return to the heat. Combine the arrowroot with the cold Half & Half and gradually add to the blended soup. Simmer until soup has thickened. Garnish with sour cream or yogurt.
